At the table! – Transcribing the «Koch Buch und sonst allerhand Recept»
An exciting source on the kitchen around 1750 has been transcribed in full.
At the Biblioweekend 2024 «Zu Tisch!», Citizen Scientists began transcribing the «Koch Buch und sonst allerhand Recept» by Marianne Lutz née Messmer. This handwritten cookbook, written around 1750, provides an insight into everyday life in bygone eras.
The recipes include pies, soup, lots of meat, fish and much more. The index, written by Marianne Lutz herself, has already been transcribed at the start of the project.
A citizen scientist, who does not wish to be named, discovered the source from which Marianne Lutz took many recipes with minor adaptations: Bernisches Koch-Büchlein. Darinnen in einer Sammlung von mehr als dreyhundert Recepten, gute Anweisung gegeben wird, allerhand... Speisen... zu appretieren... / samt einem vollständigen Register herausgegeben, und zum zweytenmahl gedruckt und mit vielen raren Recepten vermehrt. Bern 1749.
Thanks to the commitment of 10 Citizen Scientists, the 183 pages of the «Koch Buch und sonst allerhand Recept» have been deciphered and the text is available online on the e-manuscripta.ch platform.
